
Oven-Baked Eggs with Spinach
Description
If you're tired of the usual ways to make fried eggs, you'll definitely like this one. There's no splattering vegetable oil, and you don't have to stand at the stove. Instead of spinach, you can use other vegetables—for example, tomatoes, peppers, zucchini, or onion. You can make the dish in one baking dish or divide it into small ones, like those used for julienne. Fresh or frozen spinach both work.

1. Wash the spinach, then pat it dry. Place the spinach in a heated skillet and add 2-3 tablespoons of water. Cook over medium heat for about 2-3 minutes until it softens, then drain any remaining water.

2. Grease two baking dishes with vegetable oil, divide the spinach between them, and crack a couple of eggs on top. Season with salt and pepper. Crumble 2 tablespoons of cheese into each.

3. Place the molds in an oven preheated to 200 degrees for 18–20 minutes. Serve the finished breakfast immediately.
