Scrambled eggs with tomatoes and cheese

Description

The appetizer comes together quickly and easily. In the morning you want something fast, simple, yet filling. And coffee! A must! I brew a cup and set to making breakfast. Tomatoes are especially fragrant and plump these days—I’ve gathered a whole collection: beefsteak, a few yellow cherries, and there was even a brown one lying around. I’ll take a mix of varieties—that’s more interesting. As for the cheese, any cheese works for scrambled eggs with tomatoes and cheese, except hard varieties. I have mildly salty soft Feta, and that’s what I’ll use. Serve with greens and sauce.
