
Scrambled Eggs with Mussels

A tasty appetizer for any gathering. Say what you will, but fried eggs are one of humanity’s greatest culinary inventions. Millions of people around the world have eggs for breakfast every morning—arguably the most popular breakfast in the world. Still, eating the same fried eggs over and over gets boring and monotonous. I suggest adding a little variety to this familiar dish and making fried eggs with mussels—more nutritious and wholesome than the traditional version. In a small saucepan, mix half a glass of wine and a glass of water, add the mussel meat, bring to a boil, and cook for another 3–4 minutes. Place the cooked mussels in the bottom of a baking dish greased with olive oil. Sprinkle the mussels with herbs.

Lightly beat the eggs with a fork in a small bowl and season with salt. Pour the egg mixture over the mussels.

Sprinkle the top with grated Parmesan.

Bake the fried eggs for about 10 minutes at 220 degrees.
