
Italian Scrambled Eggs
Description
The appetizer is quick and easy to prepare. Making an Italian-style omelet means gathering everything you have in the refrigerator and pouring eggs over it. In fact, there are simply countless variations of this dish, right up to adding spaghetti. I offer you one improvisation. Serve with herbs and sauce.

1. Peel the onion and chop it finely. Pour a little vegetable oil into a preheated skillet (choose one that can later go in the oven) and add the onion.

2. Peel the garlic and pass it through a press (you can grate it). When the onion has turned slightly golden, add the garlic and fry for another 2–3 minutes over low heat.

3. Cut the ham or any other meat into small pieces and put them in a frying pan. You can add tomatoes (fresh or canned) along with the ham.

4. Break the eggs into a deep bowl. Season with salt and a little pepper. Add the milk and whisk lightly with a fork. Add the Parmesan grated on a fine grater to the egg mixture and mix thoroughly thoroughly.

5. When the ham has browned a little, it’s time to add the spinach.

6. Mix all ingredients in the pan and pour the eggs in.

7. Gently stir the mixture with a spatula so the eggs spread evenly above and below the filling. When the eggs are lightly set, scatter pieces of mozzarella or brynza on top and transfer the pan to the oven for 10–15 minutes.

The finished dish can be served hot, but it also remains delicious when served cold.
