
Georgian fried eggs

1. The main focus of Georgian-style scrambled eggs at home is, of course, on the tomatoes. They should be soft, juicy, even slightly overripe, so they release as much juice as possible. Wash the tomatoes, pat dry, and slice.

2. Pour a little oil into a deep skillet and heat it well. Add the tomatoes and cook for 5–7 minutes, stirring occasionally.

3. When the tomatoes are soft and the excess water has evaporated, season them well with salt and pepper. Add cilantro or basil.

4. Carefully break the eggs into the tomatoes. On the tomato "cushion" they should have plenty of room.

5. Next, there are two options—you can leave the eggs as they are or cover them with a lid. It all depends on how you want the yolks to look. In this case, the eggs are cooked with the lid on.
