
Ostrich Egg Fried Eggs

When my husband brought home an ostrich egg, I didn’t know what to make with it. I was afraid it would go to waste while I kept thinking it over, and I really wanted to try it. Then I came across a recipe for scrambled ostrich egg with vegetables and ham. I loved the idea! By the way, scrambled ostrich egg can be a full dinner or a light lunch. It turns out fluffier than chicken eggs. I wish you all the best. Serve with greens and sauce.

Prepare the ostrich egg. This is what mine looked like.

Since the egg itself is very hard to crack—the shell is like stone—I recommend making a small hole and piercing the yolk with a thin knife.

And pour the ostrich egg into a cup.

Prepare the remaining ingredients. Finely chop the green onions, and slice the olives and mushrooms into thin slices. Cut the tomatoes into small wedges and the ham into thin strips.

Mix all the ingredients with the ostrich egg.

Grease the pan with vegetable oil. Heat it up. Then pour the mixture of ostrich egg and vegetables with ham into the pan. Cover with a lid and simmer for about an hour.

The fried ostrich egg should not burn. It is better if it is slightly greasy on the bottom from excess vegetable oil. Serve hot.
