
Eggs with tomatoes

This recipe won't take much time. Eggs with tomatoes is a dish from my childhood. I used to think it was exclusively a Caucasian dish. My mom would always ask: "Want Caucasian-style scrambled eggs?" But childhood passed, and with it the stereotype that eggs cooked with tomatoes are exclusively Caucasian. In fact, I don't even understand what's particularly Caucasian about it :) Anyway, I've loved eggs with tomatoes since childhood and still regularly make them for breakfast. Break 2 eggs into a bowl, add salt, and whisk using a whisk or blender.

Then heat a frying pan on the stove, adding olive oil to it. Pour in the beaten eggs and fry the omelet on both sides. Place the cooked omelet onto a plate.

Add a little more oil to the same skillet and heat it.

Place finely chopped garlic and grated ginger on the frying pan.

Sauté them for about a minute, stirring constantly.

Then add a spoonful of brown sugar.

Then add the halved cherry tomatoes to the pan. Fry them for about a minute.

Then pour soy sauce, rice vinegar, and sesame oil into the pan and mix well.

Simmer briefly (until some of the liquid has evaporated), then place the filling onto the omelet and sprinkle with fresh parsley.
