
Eggs in sauce
Description
The recipe won't take much time. I used to think that making eggs in sauce was something silly and complicated. But that was only until I tried it! The taste is truly wonderful, and once you get the hang of it, your poached eggs will turn out perfect! Do try making it yourself—it's easy. Serve hot.

1. Let's make poached eggs. For this, add salt to taste and vinegar to the water. Wait until the water comes to a boil, then create a whirlpool in the center. Experts recommend using a hand mixer to create the whirlpool, but I haven't tried it myself. Crack the egg into the center of the whirlpool. This way, the egg white won't spread out but will stay wrapped around the yolk. After one minute, turn off the heat and cover the pot with a lid. After three to four minutes, the hot water will have done its job, and the egg will be ready to remove.

2. Let's make the sauce. Beat three egg yolks with a whisk, adding ice water. Keep the bowl constantly over steam. You can place it right over the pot where the egg is boiling. Gradually add pieces of butter, keeping the mixture over steam until the butter melts. Then add lemon juice and salt/spices to taste.
