
Cuban-style eggs
Description
For Cuban-style eggs, it's best to use red bell pepper for a richer color. You can use any cheese, but the sharper it is, the more flavorful the dish will turn out. If desired, you can add a bit of grated garlic to the filling.

Prepare all the necessary ingredients for making Cuban-style eggs. Boil the eggs for 15 minutes until cooked, then cool and peel them.

Wash the pepper, remove the seeds and stem, and chop finely. Pour vegetable oil into a frying pan and add the chopped pepper.

Peel the onion and finely chop it. Add it to the pan with the chopped pepper.

Sauté the vegetables over medium heat for 5 minutes, stirring.

Add the chopped tomatoes in their own juice, mix and sauté the vegetables for another 4 minutes. Season with salt and pepper to taste.

Peel the eggs and cut them in half lengthwise. Separate them into whites and yolks.

With a fork, mash the yolks, add half of the cheese grated on a medium grater, season with salt, pour in the cream, and mix everything together.

Fill the egg white halves with this filling.

Grease the baking dish with vegetable oil and place the egg halves with the filling side down.

Pour the vegetable mixture over the eggs.

Sprinkle the remaining cheese over the top of the vegetable mixture.

Place in a preheated oven and bake at 180 degrees for 10–15 minutes, until golden brown. Sprinkle the finished dish with chopped herbs.
