
Eggs Benedict
Description
Perfect with meals and drinks. Eggs Benedict recipes are showing up more and more on TV cooking shows and in recipe magazines. Personally, I’ve tried about a dozen different ways to make this dish, experimented a lot, and I think I’ve worked out the best recipe for making Eggs Benedict as delicious as possible. Sharing what I know ;) Can be served warm or chilled.

Fill the saucepan to the brim with water. Add 1 tablespoon of regular white vinegar. Bring the water to a boil, then reduce the heat before adding the eggs. Crack each egg into a separate bowl and gently lower it into the boiling water. I usually cook 4 eggs at a time.

Try to remember which ones you put in first—you will remove them from the water in the same order. Cover with a lid and boil the eggs for approximately 5 minutes, depending on how you like your eggs cooked. When done, remove the eggs with a slotted spoon.

Place the cooked eggs on a paper towel to dry them. Use a teaspoon to carefully trim the edges so the eggs look neater.

Now let's prepare the sauce. Mix the egg yolks and lemon juice in a mixer until the mixture is foamy. While the mixer is running, carefully pour in half of the melted butter. The sauce should be thick. Add a few teaspoons of hot water, then carefully pour in the rest of the melted butter without stopping the mixer; beat for about 1 minute. Add hot water as needed to reach the desired thickness. Season with salt and pepper.

Cut the buns in half and place a slice of bacon on top of each, as shown in the photo. Place an egg on top and drizzle with the prepared sauce. Garnish everything with greens.
