
Eggs Stuffed with Boiled Sausage
Description
A tasty appetizer for any gathering. The simplest version of a colorful appetizer made from eggs and sausage that can be prepared in advance for a buffet or celebration. If desired, you can use quail or duck eggs, as well as mix different fillings.

Prepare the listed ingredients. Hard-boil the chicken eggs in advance for about 12–15 minutes, then cool them in ice water for another 5–10 minutes.

Peel your chosen type of sausage and grate it on a fine-hole grater into a deep bowl. Peel the boiled chicken eggs, rinse them in water, and cut them vertically so that you end up with two boats. Add the yolks to the bowl with the grated sausage. Mix everything thoroughly.

Add mayonnaise of any fat content, salt, and ground black pepper.

Using a teaspoon, fill the remaining egg white boats with a little more filling. Place all the stuffed eggs on a plate or board.

Garnish the dish with fresh herbs and serve. You can prepare the appetizer ahead of time, 1–2 hours before your guests arrive, and store it in the refrigerator.
