Berry Cake
Description
Berry cake will become your favorite dessert, as its delicate flavor from cream, cottage cheese, and fresh berries will leave no one indifferent. You can use your favorite berries—strawberries, raspberries, blueberries, or blackberries—entirely up to you. Alternatively, instead of cream, you can top the cake with chocolate glaze. This berry cake will become a must-have at any festive table, as its impressive appearance is perfect for a special occasion. Prepare it and enjoy it either cooled or slightly warm.
Instructions

Step 1
Well, let's start preparing the berry cake with eggs. We beat them using a mixer, without separating the whites from the yolks. After 5 minutes, gradually add sugar to the egg mixture and continue mixing with the mixer until a fluffy foam forms and the mixture reaches a creamy consistency (7–10 minutes).

Step 2
In a separate container, mix the flour, starch, and baking powder. Sift into the egg foam and gently stir, being careful not to disrupt the fluffy texture.

Step 3
Prepare the baking pan. Line it with parchment paper and pour in the sponge cake batter. Place it in a preheated oven at 180 degrees Celsius for 45-60 minutes. Once the sponge cake is baked, let it cool completely, then remove it from the pan.

Step 4
Press the cottage cheese through a sieve, add the chilled whipped cream, previously whipped with powdered sugar and vanilla until thickened. Gently mix everything together.

Step 5
We cut the sponge cake into 2-3 layers. On the bottom layer, spread the cream and sprinkle with berries. Cover with the next cake layer and repeat the steps. After finishing preparation, let the cake soak. For decoration, you can use fresh berries.
