
Berry Terrine
Description
The recipe won't take much time. This very colorful dessert can even be served as a snack to cool down during summer heat. It's best to prepare it only with fresh berries, as frozen ones lose their shape and won't look as attractive in the jelly. Serve chilled.

Prepare the listed ingredients. Instead of blackcurrant juice, you can use cherry or berry juice.

Wash the berries in water and cut off their stems. If using cherries or sour cherries, remove the pits.

Pour the blackcurrant juice into a saucepan and heat it almost to boiling. Add the gelatin, stir, and let it sit for 10 minutes to swell. After 10 minutes, stir again, especially at the bottom and sides of the container.

Place the sliced strawberries and gooseberries on the bottom of the mold—when the dish is flipped, they will end up on top.

Then pour the mulberries into the mold and add the blackcurrant juice with gelatin. Make sure the mold does not leak. Place it in the freezer for 1 hour or in the refrigerator for at least 2-3 hours!

Remove the mold and hold its sides and bottom under hot water for just 1-2 minutes so that the jelly separates from the inside. Then cover with a plate and carefully invert. Top with a little sour cream or whipped cream if desired.

Garnish the dessert with fresh berries and serve chilled.
