Berry pie with mascarpone

Description

It pairs perfectly with tea and coffee. You can use any berries for the pie, but if they are very juicy, dust the berries on top with cornstarch. If you like sweeter pies, sprinkle it with icing sugar after it has cooled. This is a great choice with tea, coffee, or milk. Serve cooled or slightly warm.

    Prepare all the ingredients you need for a mascarpone and berry pie. Pick over the berries, rinse them, and pat dry. Take the butter out in advance so it softens.

    Break the eggs into a bowl, add softened butter, sugar, and a pinch of salt. Beat until smooth. Mix the flour with baking powder and vanilla sugar, then add to the bowl.

    Quickly knead a soft dough. Refrigerate for 30 minutes.

    Roll out the dough into a circle and line an 18-centimetre pan with it, pressing the sides up to the rim. Prick the base of the dough with a fork.

    In a bowl, put the mascarpone, sour cream, and sugar, and crack in the egg. Beat everything well until smooth and even.

    Pour the mascarpone mixture into the lined tin, then spread the berries on top. I used wild strawberries, raspberries, and blueberries.

    Place the pie in a hot oven and bake at 180 degrees for 40–45 minutes. The pastry should turn golden brown, and the filling should set and stop jiggling. Remove the finished pie from the oven and let it cool completely, then remove it from the tin.
