
Berry curd
Description
The dish is prepared without unnecessary complications. The berry curd can be used as a cake filling, a filling for pastries and tartlets, or simply served with tea and cookies. I recommend adjusting the amount of sugar and lemon juice depending on the sweetness of the chosen berries. The ready dessert can be served.

Prepare all the necessary ingredients. My curd will be made from black and red currants.

Place the berries in a small saucepan or pot and set over heat. After boiling, simmer for about 5 minutes over low heat, stirring occasionally.

Carefully separate the yolks.

Add sugar and mix until smooth.

Squeeze the lemon juice. If the berries are sweet, such as strawberries and raspberries, add the juice of a whole lemon.

Add the starch and rub everything together to form a smooth mixture.

I strained the berries through a sieve to make the curd smoother.
