
Lamb in a pot
Description

1. Cut the lamb into cubes, mix with two tablespoons of olive oil, and set aside.

2. In a large plastic bag, mix paprika, turmeric, cayenne pepper, cinnamon, cloves, cardamom, salt, ginger, saffron, garlic powder, and coriander, then shake the bag well to combine the ingredients. Add the lamb to the bag and shake again to coat the meat with the spices. Refrigerate for 8 hours, or preferably overnight.

3. Heat the remaining olive oil in a pot over medium heat. Add 1/3 of the lamb and brown well. Repeat two more times, then add the onion and carrot and cook for 5 minutes. Squeeze in the garlic and add to the pot. Add the ginger and cook for another 5 minutes. Stir in the lemon zest, chicken broth, tomato paste, and honey.

4. Bring to a boil, reduce heat, cover, and simmer gently for 1 ½ - 2 hours, stirring occasionally, until the meat is tender. If the mixture turns out too thin, you can thicken it by adding a mixture of water and cornstarch during the last 5 minutes of cooking. Serve with rice or couscous.
