
Barley porridge cooked in water

To fully bring out the flavor of barley grits, they should first be dry-roasted in a skillet until they change color—that is, they should darken slightly and turn brownish. While the grits are roasting, put salted water in a saucepan on the stove to bring to a boil.

When the water boils, start gradually adding the porridge, constantly stirring to prevent the grains from clumping. Keep stirring it with a spoon. Then cover the porridge with a lid, reduce the heat to minimum, and let it simmer.

Cook the grain until the water has completely evaporated and been absorbed. Taste the porridge for salt, and if needed, add a little more. Then add a piece of butter and cover with a lid again.

After five minutes, open the lid and stir the porridge so it is fully mixed with the butter. Serve the porridge hot or warm with meat or fish dishes.
