
Apple cake
Description
Note that the ingredient quantities in this recipe are calculated for an 18 cm pan, resulting in a small cake. If you have a large family, feel free to double the ingredients. For this recipe, you can use tart or even sour apples; you'll be able to adjust the sugar amount while preparing the cream. It's best to use thick, high-fat sour cream, as it will soak well into the cake layers and make the dessert tastier. You can replace vanilla sugar with a small pinch of cinnamon for a fragrant flavor. Serve with tea or coffee.

1. Peel the apples, slice them, and sprinkle with lemon juice. Place the apples in a heavy-bottomed saucepan, add a little water, and simmer covered for 5 minutes.

2. Then add sugar and simmer over low heat until done, 15-20 minutes. Blend the hot apples with a blender into a puree and immediately add sour cream and butter.

3. Mix until smooth, warming in the microwave if necessary. Add vanilla sugar, cool, and refrigerate the cream for 3 hours.

4. Prepare the dough: mix the sifted flour with baking powder and cold butter grated on a coarse grater. Rub the mixture into crumbs. Beat the egg with sugar and add it to the dough. Knead the dough until smooth and homogeneous.

5. Wrap the dough in plastic wrap and refrigerate for 1 hour. Divide the dough into 5 parts. Roll out a piece of dough into a flat sheet on a floured parchment paper.

6. Prick the dough with a fork and bake in a preheated oven at 200 degrees for 6-8 minutes. While still hot, trim the baked layers to the size of the pan. Beat the cooled cream with a mixer and generously spread it over the cooled layers.
