
Apple Tarte Tatin
Description
Delicious pastries for the whole family. Already tried every kind of apple charlotte? Then make French apple tarte Tatin. You can make it in various ways—the dough can be shortcrust or puff, as in this recipe. Serve cooled or slightly warm.

Prepare the ingredients.

Pour the sugar into a frying pan or saucepan in a layer no more than 1 cm thick. Place over low heat and do not stir until the sugar begins to caramelize.

As soon as the sugar begins to caramelize, add the butter and stir it into the sugar mixture.

Pour the caramel onto a sheet of parchment and spread into a thin layer. Any butter that did not incorporate into the caramel can be poured off for use in the filling later.

While the caramel sets, peel and core the apples. Cut them into very thin slices.

Break the caramel into pieces.

Put the caramel in the blender jar.

Crush the caramel almost to a powder.

For baking tarte Tatin you can use any tin or mould you like—you layer caramel, apples, caramel, and so on.

From a sheet of puff pastry, cut out a circle of a suitable size.

Place the dough over the apples and carefully tuck the edges of the dough inward. Prick the top with a fork. Bake the tarte Tatin at 180 °C for 25–30 minutes.

Turn the baked tart Tatin out so the apple filling is on top; do this carefully, because baking creates a hot syrup. A scoop of ice cream goes well with the tart.
