
Apple juice with citric acid for winter storage

Prepare all the ingredients.

Wash the apples, remove the cores, and slice them into small pieces. Cut off any spoiled parts.

Pass the apple slices through a juicer. I use a centrifugal juicer; the juice will have a lot of pulp, but that's not a problem.

Pour the resulting juice into a saucepan. Wait about 5 minutes for the pulp to rise to the surface. Carefully skim off most of the pulp with a spoon.

Add sugar and citric acid to the saucepan. Heat over low heat until almost boiling. The sugar should dissolve completely.

Strain the juice through cheesecloth to remove any remaining pulp. Pour into a clean sterilized jar.

Seal the jar. Wrap it in something warm and turn it upside down. Leave it like this until completely cooled. Then store the juice in a dark, cool place.
