
Apple snow
Description
Never heard of apple snow? I only recently learned about this dessert myself. I saw it being prepared on a cooking TV show. What attracted me was the simplicity of preparation and the small number of ingredients. We tried it—it turned out really delicious. I recommend using more tart apple varieties; that way, the apple snow will be absolutely wonderful. Children especially love it—probably because of the unusual name :)

Peel and finely chop the apples.

Add sugar to the apples in the saucepan.

Add enough water to the pot to completely cover the apples. Place over medium heat and cook until the apples are soft (about 20 minutes).

Strain the contents of the pot through a sieve. The liquid can be diluted with water and drunk instead of being discarded—it makes a sort of sweet compote.

Add the egg white to the apple pulp.

Whisk until light and fluffy, with a consistency resembling snow.

The apple snow is ready. Cool and serve chilled.
