
Apple pie with poppy seeds

Sift 250 grams of flour into a large glass bowl to aerate it—this will make the baked goods fluffy and help them rise well. Chop the butter with a knife and add it to the flour. Add 80 grams of powdered sugar, a pinch of salt, and crack in the egg. Knead until you have an elastic dough, then refrigerate it for half an hour.

Pour the poppy seeds into a suitable container and cover with a small amount of water. Once the water is completely absorbed and the poppy seeds have swollen, grind them in a blender or coffee grinder. Add the cream and two eggs. Thoroughly mix the entire mixture with a fork until smooth.

Take the dough out of the refrigerator and roll it out into a thin layer. Grease the baking pan with vegetable oil and sprinkle with breadcrumbs. Place the dough into the pan, pressing it firmly against the bottom. Prick it several times with a fork to prevent the dough from puffing up during baking.

Place the poppy seed mixture into the prepared dough-lined pan. Wash the apples, peel them, remove the cores, and cut into large slices. Arrange the apple slices on top of the poppy seed filling. Preheat the oven to 180 degrees Celsius and place the pie inside. Bake for ten minutes.

Beat the remaining three eggs in a separate bowl and mix with powdered sugar. Using a mixer, beat the mixture into a stable foam. Add the remaining flour, baking soda, and starch. Gently mix to prevent the mixture from deflating.

Spread the resulting mixture over the apples on the pie. Bake for 30 minutes. When fully ready, remove the pie from the oven, let it cool, and decorate with whipped cream, apple slices, and poppy seeds, if desired.
