
Apple pie with yogurt and Sambuca
Description
This tender cake pairs perfectly with a cup of hot coffee. It's best prepared a few days in advance, as by the third day it becomes exceptionally moist and delicious. Serve the cake with whipped cream. The baking is done. Serve at the table.

1. Place the baking sheet in the center of the oven and preheat the oven to 175 degrees. Grease the pie pan with butter and lightly dust it with flour. Peel the apples, remove the cores, and cut them into small cubes.

2. Sift the flour and baking powder together into a bowl. In a large bowl, beat the eggs and sugar using an electric mixer until pale yellow, about 1 minute. Add the buttermilk and sambuca, and beat until smooth. Add the sifted flour, alternating with the olive oil. Gently mix the batter with the sliced apples.

3. Pour the batter into the prepared pan and smooth the surface with a spatula. Bake the cake until the top is golden brown, 55 to 65 minutes. Let the cake cool on a wire rack. Using a thin knife, remove the cake from the pan and transfer it to a large serving plate. The cake can be prepared up to 3 days ahead. Loosely wrap it with plastic wrap and store until ready to use.

4. Before serving, sprinkle the pie with powdered sugar, cut into pieces and serve with whipped cream, if desired.
