
Apple pie with ginger and cinnamon
Description
Homemade baked goods for tea. Instead of apples, you can use pears, cherries, rhubarb, or blueberries in this pie. It's perfect served with a cup of coffee, either warm or chilled. Ideal for tea.

1. Preheat the oven to 160 degrees. Grease a square baking pan with oil. To prepare the filling, dice the apple into small cubes. Mix with sugar, cornstarch, and ginger. Set aside.

2. To prepare the topping, in a large bowl, whisk together sugar, spices, and salt with melted butter until smooth.

3. Then add the flour and mix with a wooden spoon. The mixture should resemble stiff dough. Set aside.

4. To prepare the pie, in a small bowl mix together sour cream, egg, egg yolk, and vanilla extract. Using a mixer, combine flour, sugar, baking soda, baking powder, and salt.

5. Add the butter, cut into 8 pieces, and one spoonful of the sour cream mixture, beating with a mixer at medium speed. Increase the speed and beat for 30 seconds. Add the remaining sour cream mixture in two batches, beating for 20 seconds after each addition. Set aside 1/2 cup of the batter.

6. Place the remaining dough onto a baking sheet. Smooth it out with a spatula.

7. Place the filling. Then place the reserved dough on top and spread it evenly over the filling.

8. Sprinkle with the sugar mixture. Bake the pie for 45-55 minutes. Let it cool completely before serving.
