
Apple Pie with Dry Dough

It’s so tender, juicy, tasty and aromatic that you’ll hardly be able to settle for just one slice. A crisp crust with a literally melting apple filling of creamy consistency will please any picky eater. The preparation is very simple, even a child can manage, and the ingredients are accessible and practically always on hand. My pan is 18 cm in diameter; for a larger pan, double the ingredients. Serve it cooled or slightly warm.

Prepare all the ingredients. Put the butter in the freezer in advance; it should be well frozen.

Combine the flour, sugar, semolina, and baking soda in a deep bowl. Mix.

Grate the apples using a coarse grater. If the skin is very tough, it's better to peel it.

Grease the baking pan with butter and evenly spread 1/3 of the dry mixture.

Place half of the grated apples on top and press them with a fork.

Then repeat the dry layer and the apple layer again. Sprinkle the remaining dry mixture on top. You should end up with 2 layers of apples and 3 layers of dry dough.

Grate the butter on a coarse grater and spread it on top. Bake the pie at 180 degrees until a golden crust forms on top.

Apple pie made from shortcrust dough is ready. Let it cool a bit, then remove it from the pan and serve.
