
Apple compote from fresh apples

Wash the apples and, if desired, peel them, though this is not necessary. You need to remove the cores and seeds. Then cut the fruit into large slices.

Take a saucepan of suitable size and pour 1.5 liters of water into it. Place the saucepan over low heat and bring the water to a boil. It's better to add the fruit for the compote to boiling liquid, as this way they will release more vitamins.

When the water boils, add the fresh apples cut into slices. As soon as the compote comes to a boil again, reduce the heat to the minimum. Add sugar. If you are using sour apples, you can add more sugar. Cover the compote with a lid and cook for fifteen minutes.

When the compote is ready, remove it from the heat and let it cool. Then pour it into a glass pitcher, adding fresh mint and, optionally, honey, cinnamon, or lemon slices. Serve the compote chilled.
