
Apple Cobbler with Sweet Potatoes
Description
The recipe won't take much time. This cobbler goes well with a scoop of vanilla ice cream. It can be served with tea or coffee.

1. Peel the apples and slice them thinly. Peel and slice the sweet potatoes. Preheat the oven to 190 degrees. In a large bowl, combine the sweet potatoes with 3 teaspoons of melted butter, 1 teaspoon of brown sugar, and 1/2 teaspoon of cinnamon. Mix together until the potatoes are well coated with the mixture.

2. Place the potatoes on a baking sheet with a silicone mat. Loosely cover with foil and bake for 20 minutes, until cooked through. Mash into purée and set aside.

3. In a large bowl, mix brown sugar, lemon zest, and cinnamon for the filling.

4. In a skillet, melt 2 tablespoons of butter over high heat. Add the apples. Cook, stirring, for 5 minutes, until tender. Carefully add to the sugar mixture and stir to combine.

5. Place the mixture into a baking dish, cover with a lid, and keep warm.

6. In a medium bowl, mix 1 cup of sweet potato, milk, honey, and butter.
