Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Rub the flour with sugar and chilled butter into crumbs, add a pinch of salt and baking powder.
- 3
Step 3

Beat the egg with two tablespoons of cold water.
- 4
Step 4

Make a well in the flour mixture and pour in the egg-and-water slurry.
- 5
Step 5

Quickly knead the dough, shape it into a ball, and put it in the refrigerator for 30 minutes.
- 6
Step 6

While the dough is chilling, prepare the sour cream filling (or natural yogurt). Add starch, vanilla sugar, cinnamon, an egg, sugar (2 tbsp), and whisk.
- 7
Step 7

Core the apples (peel them if desired), then slice them into thin pieces.
- 8
Step 8

Prepare a baking dish, preferably a springform one. Grease it with butter, dust with flour, and shake off any excess flour.
- 9
Step 9

If the pan is not springform, you can line it with baking paper with overhanging edges to make it easier to remove the pie from the pan.
- 10
Step 10

Spread out the dough, smooth it into the pan, make the sides, and prick the bottom with a fork.
- 11
Step 11

Line a baking dish with damp, crumpled, then smoothed-out baking paper, add peas or beans, and prebake the pie crust for 20 minutes at 180 degrees.
- 12
Step 12

Place the apple slices onto the pre-baked dish.
- 13
Step 13

Pour over the prepared filling, sprinkle the top with brown cane sugar, and bake for about 40 minutes at 180 degrees.
- 14
Step 14

Cool the finished apple quiche, carefully remove it from the pan, and enjoy the magnificent taste of apple pie with a delicate filling and a crumbly shortcrust crust.
