
Apple turnovers with brandy
Description
This recipe will yield about 14 buns. Serve warm or chilled. Perfect with tea.

1. Make the dough. In a bowl, mix flour, sugar, and salt. Cut the butter into pieces and place in another bowl. Put both bowls in the freezer for 1 hour. Remove both bowls from the freezer and make a well in the center of the flour mixture. Add the butter and mix using a pastry cutter until the mixture resembles coarse crumbs. Make another well in the center. In a small bowl, whisk together sour cream, lemon juice, and water, then add half of this mixture to the dough. Mix with your fingertips, breaking up large clumps. Add the remaining mixture and mix lightly. Do not overmix the dough. Cover with plastic wrap and refrigerate for 1 hour. If preparing the dough in advance, it can be frozen at this stage for up to one month. On a lightly floured surface, roll out half of the dough to a thickness of 8 mm. Using a 10 cm diameter cutter, cut 7 rounds from the rolled dough. Place the rounds on a baking sheet lined with parchment paper and chill in the refrigerator for about 30 minutes.

2. Peel and core the apples, then cut them into 6 mm cubes. In a bowl, mix the apples with lemon juice and zest. In a medium bowl, combine sugar, flour, salt, and spices. Mix the dry ingredients with the apples. Remove the chilled dough from the refrigerator and let it sit at room temperature for 2 to 3 minutes. Place about 1 tablespoon of filling onto one half of each dough circle. Using a brush, moisten the edges of the dough with cold water, fold the circle in half to form a semicircle, and press the edges together. You can create a decorative edge using a fork. Repeat with the remaining dough and filling. Place the turnovers on a baking sheet and chill in the refrigerator for another 30 minutes.

3. Preheat the oven to 190 degrees. Take the buns out of the refrigerator, make 3 small slits in the dough, lightly brush with beaten egg yolk, and sprinkle with sugar.

4. Bake the buns until golden, about 20 minutes. Remove the baked buns from the oven and let them cool slightly before serving.
