
Apple turnovers
Description
Perfect with tea and coffee. Recipe for small apple-filled pastries with lemon zest, cinnamon, and nutmeg, prepared similarly to an apple pie. Serve cooled or slightly warm.

1. Prepare the dough. Cut the butter into small pieces. In a food processor, mix the dry ingredients for several seconds, then add the fat and blend until the mixture resembles wet sand.

2. Evenly spread the cut butter on top and mix until the dough resembles wet sand again.

3. Transfer the mixture to a large bowl. Add about 6 tablespoons of cold water and mix with a spatula, adding more water if the dough is too dry. Turn the dough out onto a lightly floured surface, handling it as little as possible.

4. Divide the dough in half, wrap each part in plastic wrap, and refrigerate for at least 2 hours or overnight.

5. Prepare the filling. Peel the apples and remove the cores, then cut them into pieces. Place the apple pieces in lemon juice and finely grated zest, and set aside. In a medium bowl, mix flour, sugar, spices, and salt. Add the apples and stir to combine. Preheat the oven to 200 degrees. Line two baking sheets with parchment paper or silicone mats.

6. Take one portion of dough out of the refrigerator and roll it into a 30x30 cm square. Cut the square into rectangles, approximately 10 cm wide and 15 cm long. You should get 8 to 10 rectangles. Place 4 to 6 rectangles (depending on the size of the baking sheet) onto the prepared baking sheet. Spread about half of the filling over the rectangles. Top with the remaining rectangles and seal the edges, using a fork if desired.

7. Brush each pie with slightly beaten egg white, optionally decorate with apples cut out from dough, and brush again with egg white. Sprinkle each pie with a teaspoon of sugar.

8. Repeat with the remaining dough and filling. Bake for 30-40 minutes, until deep golden brown. Let cool for a couple of hours before serving.
