
Whipped crucian carp roe
Description
Perfect for both special occasions and everyday meals. An incredibly delicious appetizer made from crucian carp roe — it's whipped roe! To give it a beautiful orange tint, add lemon juice or 6% apple cider vinegar, but only after whipping the roe. Don't forget to let the appetizer rest in the refrigerator for at least 2–3 hours after making it, or better yet 6–8 hours. Serve with herbs and sauce.

Prepare the specified ingredients.

Clean the caviar by removing the black and transparent membranes, place it in a fine-mesh strainer or a triple layer of cheesecloth, and rinse with water. Leave it in the strainer for 5–6 minutes to let the excess liquid drain off.

Add the salt and mix everything thoroughly. At this stage, place the bowl with the salted roe in the refrigerator overnight — this is a required step for making whipped roe.

After the specified time, the roe needs to be rinsed. To do this, line a colander with 2–3 layers of cheesecloth, or use a cheesecloth bag so the small eggs are not washed away by the water. Rinse it with cold water and be sure to hang it to drain for 2–3 hours. If there is excess liquid, the roe will not whip up properly.

Then transfer it to the bowl of a food processor or mixer and beat on the highest speed for about 5–8 minutes. During this time, the mixture should turn white. All the films will wrap around the whisk.

Finely chop the washed green or yellow onion, add the chopped onion to the container, and blend again for 2–3 minutes.

Begin pouring in the vegetable oil in a thin stream, exactly as you would when making mayonnaise. Do not stop whisking the mixture at the highest speed. After 5–6 minutes, the mixture will lighten further and thicken. At the very end, add the lemon juice or vinegar, transfer the whipped crucian caviar to a sauce boat or a small bowl, and refrigerate for at least 2 hours.

But whipped fish roe is at its most delicious the day after whipping—it absorbs the onion aroma. Serve it chilled with hot boiled potatoes, bread slices, toast, and the like.
