
Easter baking
Description
The recipe won't take much time. There are many recipes for preparing this pastry, and I think every homemaker can share their own. Easter cakes are decorated with icing, sprinkles, dried fruits, nuts, poppy seeds, and so on. Making Easter breads takes a lot of time, as the dough needs to rise properly. The baking is ready. Serve at the table.

In a bowl, break the chicken eggs and add 3 more egg yolks, mix slightly, then add sugar and beat until a homogeneous mixture forms.

Warm the milk in a saucepan, add butter and yeast to it, then pour this mixture into the eggs and sugar, mix well, transfer to a pot, cover with a lid, and let stand for 5–6 hours.

In a separate saucepan, pour boiling water over the raisins and let them sit for 10 minutes, then drain the water.

Add the raisins to the main mixture, then add brandy, salt, and vanilla. Gradually add sifted wheat flour in portions.

After each time, thoroughly mix the dough with a spatula, then let it rest for 1.5–2 hours.

Grease special paper molds with butter, fill them one-third full with dough, and let the molds rest in a warm place for 1.5 hours.

Bake the Easter cakes in a preheated oven at 185 degrees for 15 minutes, then reduce the temperature to 175 degrees and bake for another 30-35 minutes. Check the readiness of the cakes with a wooden skewer.

Transfer the pans from the oven to a wire rack, then carefully remove the paper.

Beat the egg white with powdered sugar and lemon juice until smooth. Glaze the cooled Easter breads and decorate with chopped dried fruits (raisins and apricots).
