
Baking with whey
Description
Homemade baked goods for tea. To make fluffy and delicious baked goods using whey, follow the tips in my recipe. The dough is made without a pre-ferment (if you're confident in your yeast), rises quickly, and the pieces double in size during baking. Today I'll tell you. Serve cooled or slightly warm.

1. I love cooking with homemade whey or sour milk. The baked goods turn out amazing! Today I decided to make buns with fresh apricots (you can use any fruits or berries you like).

2. Prepare classic yeast dough without pre-ferment: add yeast, a pinch of salt, sugar, and flour to warm whey. Start kneading the dough and gradually pour in vegetable oil. The dough should be soft and not stick to your hands. Let it rise in a warm place for 1 hour. The dough will rise very quickly due to the whey.

3. When the dough has risen, you can start shaping the buns. It's apricot season now, so I decided to make pastries with these fruits. I chop the apricots into small cubes, sprinkle them with sugar, then place them onto the dough rounds, pinch the edges together, and shape them into buns. Place the buns close together on a greased baking sheet. After they have rested for a while, brush the tops with beaten egg and sprinkle with sugar.

4. Bake the buns for about 20 minutes at 190 degrees. In my oven, it takes exactly 20 minutes, but adjust the baking time and temperature as needed (check doneness with a knife or toothpick).

5. After baking, let the buns rest for a few minutes, then separate them from each other and serve. They look wonderful when sliced and taste delicious too.

6. This is how fluffy the baking turns out using whey. The buns will rise a bit more in the oven, so keep this in mind when shaping the dough pieces.
