Pastry made with filo dough

Description

Delicious pastry for the whole family. If desired, you don't need to cover the pie with a piece of dough. Instead, arrange the "rolls" in a circle from the edge to the center of the pan, trimming off excess dough, and you'll get a beautiful spiral pattern on the surface. Filo pastry sheets are incredibly thin and dry out quickly in the air, so they should be immediately brushed with oil and used right away. If you're not using them immediately, cover the sheets with plastic wrap or a damp cloth. Serve with tea or coffee.

    1. Heat the water to 50 degrees, then dissolve the salt in it. Pour the resulting water into the sifted flour, add olive oil and baking soda.

    2. Knead a soft dough and shape it into a ball. Then, slap the filo dough onto the table at least 50 times until it becomes smoother and more pliable.

    3. Divide the dough into three parts, place in a container, tightly cover with a lid, and refrigerate for 1 hour and 10 minutes.

    4. While the filo dough chills in the refrigerator, prepare the filling. Mix the cottage cheese with eggs and add a little salt.

    5. After the time has elapsed, take one ball at a time out of the refrigerator and roll out flatbreads approximately 25 cm in diameter using a rolling pin.

    6. Generously flour your hands, take the rolled filo dough sheet and, using the backs of your palms, begin stretching it in the air, gradually moving from the center to the edges while simultaneously rotating it around its axis.

    7. Stretch the dough into a very thin sheet until it becomes translucent (as thin as possible), but be careful not to tear it. Place the prepared filo dough sheets onto a dry, clean, flat surface.

    8. Divide one of the layers in half. Place half into a 24 cm diameter pan, previously greased with oil.

    9. Place the second part of the dough on the table, put a portion of the filling on one edge, and tightly roll it into a "roll". Before placing the filling, lightly brush the phyllo dough layers with oil.

    10. Similarly, make "rolls" from the remaining filo dough sheets, dividing each into 6 parts and evenly distributing the cottage cheese filling. Set aside a portion of the third sheet for the top of the pie. Arrange the resulting "rolls" in the baking dish in any order. Place pieces of frozen butter between the "rolls." Tuck the edges of the filo dough that extend beyond the dish inward. Cover the top with the reserved piece of dough.

    11. Place the pie in a preheated oven and bake at 200 degrees Celsius for about 60–80 minutes, until the crust turns golden brown. After half an hour of baking, brush the surface of the pie with a piece of butter.
