Description

The bake comes together simply and quickly. With this recipe, the dough rises in about 30 minutes, and you’ll need about the same time to cook the pancakes. All in all—just over an hour—and you’ll have a tasty, filling bake on the table for the whole family. You can serve koloby for breakfast or as a nourishing snack during the day. In the book *Vyatka Cuisine*, the authors suggest baking the pancakes in a Russian oven over an open fire in a cast-iron skillet, but if that isn’t an option for you, just bake them on the stove in a pancake pan, turning them over. Serve cooled or slightly warm.
