
Dried Squid
Description
A delicious appetizer for any gathering. You don't have to buy a tasty dried delicacy from the store. Surprise your family and friends with the bright flavor of dried squid, and they will surely ask for more. If desired, you can also add other spices and seasonings to the sauce. Serve with herbs and sauce.

Prepare the listed ingredients. Purchase frozen cleaned squid tubes and thaw them in water or at room temperature before you start cooking.

Rinse the carcass, remove the innards and the tough tube — the notochord. Slice the carcass into rings 1 cm wide.

Bring water to a boil in a saucepan or sauté pan and add the squid rings.

**Boil for 2–3 minutes in boiling water, but no longer, or the rings will become rubbery.** 😊

In a deep container, mix all the listed spices and seasonings, soy sauce, and neutral vegetable oil.

Remove the boiled rings; do not leave them in the broth! Shake off excess moisture and place them in the prepared sauce. Mix and let them sit in it for 15–20 minutes.

After that, place the squid rings on a baking sheet and preheat the oven to 60–70°C. Place the baking sheet in the oven and dry the rings for about 2 hours, leaving the oven door slightly ajar. After that, let the rings cool for 2 hours and dry them again for 2 hours. After cooling, you should end up with firm rings that spring back when pressed.

Place the dried calamari rings on a plate and serve with a delicious garlic sauce or tartar sauce.
