Believe me, they'll want seconds, so prepare a larger amount of the appetizer in advance to have enough for everyone.

Prepare the specified ingredients.

Thaw the mussels ahead of time and warm them in a skillet over medium heat for about 3 minutes so the excess liquid is released. Drain it.

In a deep bowl, combine the salt, ground paprika, ground hot pepper, and ground black pepper.

Pour in lemon juice, soy sauce, liquid smoke, and odorless vegetable oil. If you like a garlicky aroma, you can add a little crushed dried garlic.

Place the warmed mussels in this marinade and mix everything thoroughly. Leave the seafood in it until completely cooled.

Then arrange the mussels on parchment paper and dry them in the oven at 60°C on the top rack for about 1 hour, with the oven door slightly ajar. Alternatively, string the mussels on thread and hang them to dry in a well-ventilated room for 1–2 days.

Dried mussels will lose about 30 percent of their weight, but they will become more flavorful and aromatic. Serve them as a snack with beer.
