
Oven-Dried Beets
Description
Perfect for the table and for drinks. Choose bright, sweet beets for drying. If you don't salt them, you'll get a sweet version. If you place the beets in a jar and cover them with vegetable oil, you'll get a preserve similar to sun-dried tomatoes. Ready dried beets should be stored in a sealed glass jar.

Prepare all the necessary ingredients for making oven-dried beets.

Thoroughly wash the beets, wrap them in foil for baking, and place in a hot oven. Bake the beets at 180 degrees for one hour. After that, unwrap and let cool completely.

Mince the garlic, mix with salt and herbs de Provence. Peel the beet and cut into rounds.

Arrange the beet slices on parchment in a single layer and brush them with the prepared garlic mixture.

Place the baking sheet with beets in an oven preheated to 100°C, and dry for 1–2 hours. The time depends on the desired consistency and the thickness of the slices. Remove the dried beets from the parchment, let cool, and serve.
