Dried Chicken Breast for Beer

Description

Perfect for the table and for drinks. Sometimes you want to sit with friends over a glass of beer and tasty cured dried meat. But store-bought doesn’t always live up to our expectations. So you have to look for recipes to make this meat yourself. I have several ways to prepare cured dried meat in my recipe arsenal, but I like cured dried chicken breast the most. The recipe for cured dried chicken breast to go with beer is simple—nothing complicated—the main thing is to stock up on patience :), spices, and fresh breast, and the result won’t disappoint you, believe me.

    Wash the chicken breast thoroughly, separate the fillet from the bone, and pat dry with a kitchen or paper towel.

    Next, in a deep bowl, mix salt, sugar, black pepper, and a little red chili. Mix everything well and add just a tiny bit of cognac.

    Generously coat the chicken fillets with the mixture, place all the pieces in a deep dish, and spread the remaining mixture on top. Cover and refrigerate for 24 hours.

    After 24 hours, remove the meat from the refrigerator, drain the juices from the bowl, take out the fillet, and rinse it well under running water. Then pat the fillet pieces dry again with a towel.

    In one bowl, mix the spices for the rub. In principle, you can use whatever spices you have on hand. I had paprika, black pepper, red pepper, khmeli-suneli, and dry garlic (you can substitute fresh). Mix everything together, then coat the chicken breast—really work the dry mixture into the fillet.

    Then wrap each fillet tightly in gauze, a cotton towel, or a piece of cheesecloth. Put it in the refrigerator. I made a small rig — I had a small foam mold; I laid two wooden skewers on it and the fillet on top, for air circulation.

    The rest I put on a regular grill rack (for a nice shape) and hung on the balcony in the shade. You can simply hang them from hooks without any rack at all. Then forget about them for 6–7 days. Slice the finished dried cured chicken breast into thin slices; with beer it’s simply magnificent.
