The recipe won't take much time. To make dried mutton you'll need boneless meat and spices—black peppercorns, bay leaf, ginger, cinnamon, and salt. Cut the meat into large pieces, then follow the recipe below. Good luck! How to make dried mutton: 1. Wash the meat, remove large tendons and membranes. Cut into large pieces. 2. Bring 3 liters of water to a boil, add sliced ginger root, allspice, salt, bay leaf, and cinnamon, and boil for 10 minutes. 3. Dip each piece of meat into the boiling brine one at a time for 3–5 minutes. 4. Then cool the meat and arrange it on a rack in a dry, dark, well-ventilated place. Dry for 10 days. 5. Store the finished meat in a cool place or in the refrigerator. Use as an appetizer or as an ingredient in other dishes with dried meat. Serve the appetizer at the table.
