Airy honey cookies
Description
Perfect for tea and coffee. Be sure to chill the milk and butter beforehand for the dough—this way it will absorb less flour and become lighter and fluffier! Also, prepare two cookie cutters of any shape. Why two? One larger and one smaller, to make holes in the cookies. The cookies will expand significantly during baking, so keep this in mind when placing them on the parchment paper. Now, take a look:
Instructions

Step 1

Prepare the ingredients. Be sure to chill the butter in advance and cut it into cubes about 1 by 1 cm. It's also preferable to use milk straight from the refrigerator.
- 2
Step 2

In a deep container, combine both types of flour, salt, sugar, baking powder, and butter. Using your hands or a fork, mix the butter with the other ingredients until a crumbly texture forms.
- 3
Step 3

Make a well in the center, pour in the milk, and start kneading the dough. Knead until it becomes smooth and pliable.
- 4
Step 4

This is the dough you should get! Preheat the oven to 210 degrees. Prepare a baking sheet and line it with parchment paper. You'll also need cookie cutters: one large and one smaller.

Step 5

Roll out the dough to a thickness of no more than 1 cm. Use a large cookie cutter to cut out circles. Use a smaller cutter to make holes. Place the cookies on parchment paper and bake in the oven for 12–15 minutes.

Step 6

The airy cookies are ready! All that's left is to make them honey-coated: let them cool, dip each one into liquid honey, and serve with tea. Enjoy!
