Just follow the instructions precisely, and you'll get a light, airy sponge cake perfect for layer cakes or other desserts. The preparation method is quite simple—just remember the key rules you must not break: egg whites must be cold! Add sugar to the whites in small portions! Gently fold in the flour! Prepare all the necessary ingredients. Mix the flour with the starch, separate the egg whites from the yolks. The eggs must be cold - this is important!

Beat the egg whites with a mixer at high speed until the mixture holds its shape on its own (until stiff peaks form).

Continue beating, adding sugar one tablespoon at a time. Beat for one to one and a half minutes, add more sugar, and repeat until all the sugar is used. After adding the last portion of sugar, beat for another 5 minutes. You should end up with a fluffy mixture that holds its shape well and does not deflate.

Reduce the mixer speed and add the egg yolks. Mix well until smooth. Do not beat for too long.

Sift the flour with starch through a sieve into the bowl with the whipped mixture. Gently, without rushing, mix with a spoon from the bottom up.

Place the dough into the pan and smooth it out. Put it in the preheated oven at 170°C. Bake for 10 minutes, then reduce the temperature to 160°C and continue baking for another 15 minutes. Then check for doneness with a wooden skewer.

Once the sponge cake is baked, do not remove it from the pan immediately; let it cool for about 15 minutes. Then take it out and place it on a wire rack to cool completely. You can cut the sponge cake into layers about 6 hours later. Therefore, it's better to bake it the evening before. In the end, you'll get a sponge cake like this.
