
Eastern pie
Description
Perfect with tea and coffee. An Eastern pie—more than just a pie—this is a true “Eastern sweet” in its finest tradition, made from natural ingredients: condensed milk, nuts, and dried apricots. Walnuts can be replaced with any other nuts, and dried apricots can be swapped for any dried fruit mix you like. Serve warm or chilled. Perfect with tea.

Prepare the ingredients according to the recipe list.

In a mixing bowl, add the flour, salt, sugar, and baking powder.

Mix all ingredients until smooth and uniform.

Add cold butter to the flour mixture and rub it into crumbs with the flour. For convenience, you can grate the butter, dipping the piece of butter in flour from time to time.

Add the egg to the mixture.

Knead the dough; there is no need to knead it for long—simply bring the whole mass together into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

Chop the walnut kernels with a knife into coarse crumbs.

Rinse the dried apricots in hot water or scald them with boiling water, chop with a knife, and add to the nut crumbs.

Prepare a baking pan approximately 24 cm in diameter. Line the bottom of the pan with parchment paper. A pan with a removable bottom works best.

Roll out the dough into a sheet sized to fit the pan. This is easiest between two sheets of parchment paper, or by dusting the rolling pin and work surface with flour.

Place the dough in the pan and shape small rims along the edges. Prick the bottom of the pan with a fork.

Spread the apricot and nut filling in the pan.

Pour condensed milk over the nut mixture. Bake in an oven preheated to 180°C for 30 minutes.

Cool the pie on a wire rack; do not remove it from the pan right away—let it cool slightly first.
