
Volovans with beetroot and herring
Description
The pastry is simple and quick to prepare. This snack (or rather, the filling) resembles the popular Soviet salad "Herring under a Fur Coat." Besides herring, these vol-au-vents can be filled with cheese, other vegetables, herbs, meat, and various other fillings, including sweet ones. Serve vol-au-vents instead of sandwiches alongside main courses or as an appetizer. They can also be served with tea or coffee.

1. Boil the beetroot and grate it finely, add minced garlic and mayonnaise, then mix well.

2. Cut the puff pastry into 8 rectangles. Using a shot glass, cut out a circle in the center of half of them. Place the rectangle with the circle on top of the rectangle without the circle. Brush each one with egg.

3. Clean the herring from the skin and bones, divide it into small pieces.

4. Bake the pastries in a preheated oven at 180 degrees for 15-20 minutes, then let them cool.

5. Carefully cut out a circle of dough from each puff pastry.

6. Place the filling made from boiled and finely chopped beetroot inside.

7. Place 2 pieces of herring on top of the filling.

8. You can garnish vol-au-vents with herbs; serve them immediately after preparation.
