
Cheese vol-au-vents
Description
The pastry is simple and quick to prepare. An excellent appetizer that can be served either cold or hot. The inventive French came up with this way of serving appetizers, which has been popular for a very long time. Vol-au-vents can be filled with anything. I suggest a recipe for vol-au-vents with cheese. The dough is quick puff pastry, which is very easy to make. Instead of processed cheese, you can use any hard cheese; in that case, add a little mayonnaise to the filling. That's it—the pastry is ready. Serve it at the table.

Sift the flour and add the margarine cut into pieces. Chop the margarine and flour with a knife until it resembles breadcrumbs.

Dissolve sugar and salt completely in water. Pour the solution into the oil-flour mixture.

And knead a smooth dough. Place it in the refrigerator for at least 2 hours.

Take the rested dough and roll it out into a large sheet. Fold it as shown in the photo. Roll it out again. Fold once more and roll out again.

Now we proceed to cutting the pieces from which we will form the vol-au-vents. I use a glass for this. We need pieces like these: for one vol-au-vent — one solid circle and two circles with holes.

This is how we assemble the vol-au-vent. To join the rings together, you need to brush them with egg white or slightly pinch them.

Place our products on a baking sheet and bake at 200 degrees for about 20 minutes.

While the vol-au-vents are baking, prepare the filling. Wash the herbs and finely chop them. Grate the boiled egg yolks on a fine grater. Mix the yolks, herbs, and processed cheese. Season with pepper and salt, then stir well.

Place the filling into the baked vol-au-vents and return to the oven for another 7-8 minutes.
