
Delicious sauce for pasta
Description
Homemade sauce is easy and quick to prepare. I suggest making an eggplant sauce with sour cream—it's very delicious! Don't be lazy to peel the eggplants; the taste of the sauce will be much better. The sauce is ready. Store it in the refrigerator and serve with meals.

Prepare the ingredients.

Dice the onion, and crush the garlic with a knife.

Peel the eggplants and cut them into small cubes.

Heat the oil and add the onion and garlic. Fry, stirring, until lightly golden. Season lightly with salt. Remove the garlic.

Place the eggplants in the pan with the onion. Fry for 3 minutes, stirring.

Add the finely sliced sweet pepper and cook until the eggplants are tender, for another 3-4 minutes.

Add the sour cream, mix and heat for a couple of minutes. Season with salt and pepper to taste.

While preparing the sauce, cook the pasta until al dente. Drain in a colander, reserving about one cup of the cooking water.

Adjust the sauce thickness to taste by gradually adding pasta cooking water. Add chopped basil, mix well, and remove the sauce from heat.

Arrange the pasta on plates and generously drizzle with sauce. If desired and available, sprinkle the dish with grated Parmesan, garnish with basil leaves, and serve immediately.
