Delicious Easter kulich with citrus zest and candied fruits

Description

Delicious baked goods for the whole family. You can use dry yeast instead of fresh—just 17 grams. Use any candied fruits you like. I add dried cherries or cranberries. You can bake the kulich in metal tins lined with parchment paper or in paper molds. The dough rises well, and the kulich turns out fluffy and not moist inside. The baking is ready. Serve at the table.

    1. Add salt and sugar to warm milk (35-40°C) and stir until dissolved. Then add vanilla and yeast. Sift in the flour and knead the dough (slightly thicker than pancake batter). Place the sponge in a warm spot to rise for 40 minutes to 1 hour.

    2. Break 3 eggs into a bowl and separate an additional 5 egg yolks. Beat them with a mixer until fluffy. Then add lemon and orange zest.

    4. Sift the remaining flour into the dough and mix everything well with a spoon.

    6. Finally, add the candied fruits and dried fruits to the dough. Mix well to distribute them evenly.

    7. Pour olive oil onto the table and place the dough on it. Knead well with your hands until it stops sticking to them. To prevent sticking to the table, sprinkle the dough with flour. Transfer the dough to a bowl and let it rise in a warm place for an hour.

    8. Let the dough rest, then place it into molds, filling them halfway or slightly more. Allow the dough to rise a bit, then bake at 180 degrees for about 25 minutes.

    9. Once the kulich cakes have completely cooled, they can be decorated. Beat 5 egg whites until fluffy, add a pinch of citric acid and 10 tablespoons of sugar. Spread the meringue icing over the tops of the kuliches, decorate with sprinkles, and place in the oven for a few minutes.
