
Delicious sponge cake
Description
Perfectly pairs with tea and coffee. This is a classic and foolproof way to make a sponge cake. Check for doneness with a toothpick—it should come out dry when inserted into the center of the cake. For best results, wait 6–8 hours before using the sponge cake for assembling cakes. The baked cake turns out tall, so you can slice it into 2 or 3 layers. The easiest way to make a cake from it is to spread the layers with sour cream frosting, jam, or fruit preserves. Serve with tea or coffee.

Beat the eggs with a mixer until fluffy and thick. Gradually add the powdered sugar and a pinch of salt. Beat until stiff peaks form.

Sift the flour together with the vanilla. Add everything at once to the beaten eggs and gently mix with a wooden spoon or whisk.

In a separate bowl, mix the butter and milk. Add part of the dough to them, stir, and return it back to the dough. Mix until smooth.

Grease the baking pan with butter or line it with parchment paper. Pour all the batter into the pan and shake the pan to level the batter.
