
Delicious pastries made with kefir
Description
The baking is simple and quick. For the buns, you'll need kefir, egg, flour, sugar, salt, and baking powder. Since I make my own baking powder, I'm sure the buns will turn out excellent! If you have homemade sour kefir, it's better to add half a teaspoon of baking soda—the reaction will be great, producing lots of bubbles in the dough. Now, about the filling: choose whatever you like. This amount of filling is just right for the dough quantity, and I fill the buns generously, without skimping. Prepare the ingredients. First, you need to make the filling. Let's get started!

Place the peeled and chopped potatoes in cold water, add a little salt, bring to a boil and cook for 30 minutes.

While the potatoes are boiling, sauté the mushrooms and onions in vegetable oil (1-2 tbsp) until cooked.

Let the mushrooms and onions cool down.

Transfer the mushrooms to a blender and grind.

Drain all the liquid from the cooked potatoes and mash them into a puree using a potato masher.

Add the chopped mushrooms, grated processed cheese, dill, salt, and pepper to taste.

While the filling is cooling, you need to prepare the dough. Take a large bowl, pour in the kefir, add the egg, salt, and sugar. Mix well.

Divide the dough into portions, depending on the desired size of the buns you will get 8-12 pieces. I decided to make large buns, so I divided it into 8 pieces.

Roll each piece of dough into a small circle with a rolling pin. Place 2-3 tablespoons of filling.

Pinch the edge well. Press with your palm to flatten the pie.

Turn seam-side down. Do the same with the remaining dough and filling.

Heat the vegetable oil, making sure the oil level reaches at least half the height of the pirozhki. Ideally, use a deep fryer. Place the pirozhki in the oil and fry over medium heat, uncovered.
