
Tasty pancakes
Description
The recipe won't take much time. It's very simple, and I really like the idea: these pancakes can be served as an appetizer at a festive table. A few tips: mix the batter with a mixer or whisk, but not with a spoon; don't overmix the batter; all ingredients should be at room temperature; let the prepared batter rest for 10–20 minutes before frying the pancakes; you can make gluten-free pancakes using rice flour. You can prepare savory pancakes (without sugar in the batter): with herbs, salmon, bacon, vegetables, and cream cheese. Or sweet ones: with cocoa, cinnamon, chocolate, berries, and fruits. Serve warm or chilled. Perfect with tea.

Separate the yolk from the white, beat the yolk in a bowl with milk. It's perfect if the milk is slightly sour.

Then add the sifted flour, baking powder, and continue beating with a mixer.

Let the dough rest for 1 hour.

Beat the egg white with a pinch of salt and add it to the dough.

Gently mix (with upward motions) to prevent the egg white from settling.

Preheat and lightly grease a non-stick frying pan with a small amount of oil, then pour the batter with a tablespoon.

After a couple of minutes, flip the pancakes and let them brown on the other side.

Spread cream cheese on each pancake.

Then place a piece of smoked salmon, garnish with green onion feathers, and serve.
